Smoked trout can be expensive, so any cooked fish (or chicken!) will do, including a can of tuna. You can also sauté some mushrooms or chickpeas for a plant-based option.
½ bunch kale, stems removed and leaves sliced into 1/2-inch ribbons
¼ cup pumpkin seeds, toasted
1/2-lb smoked trout
1 handful cherry tomatoes, halved
¼ medium red onion, very thinly sliced
- Place kale in a large salad bowl. Pour over ½ of the dressing and toss well to coat leaves. Let kale sit for 15 minutes. Top with pumpkin seeds, tomatoes, onion slices and trout. Enjoy!
