Serves 2 | This easy salad is bursting with flavour and makes great use of things you probably already have in your pantry!

Ingredients
1 large English cucumber, ends trimmed and halved lengthwise
1 small bunch coriander, cut into 1-inch sections (set aside some leaves for garnish)
¼ tsp salt
1 tsp honey
1 tbsp tamari
1 tbsp sesame oil
1 tbsp chili oil
1 tbsp rice vinegar
2 garlic cloves, minced
Method
Place the cut side of one half of the cucumber and mash with the side of a wide knife or cleaver. Alternatively, slice cucumber in half lengthwise, then chop into 1-inch chunks.
Transfer to a medium bowl. Season with salt, mix well and set aside for 10 minutes. Strain cucumbers and discard the liquid.
Add remaining ingredients and stir well to combine.
