Bouquet Garni is a French term for a bundle of mixed herbs that infuses herby flavour into sauces, soups, and stews. You don’t always want the fresh herb leaves actually in the sauce, and some herbs have woody stems that can be tricky to fish out of a hot stew. The bouquet garni is a perfect solution that will infuse beautiful flavour, and is easy to pull out once it’s spent. Some examples of herbs that work well are rosemary, parsley, thyme, savoury, sage, and oregano.
