Seasonal Eating is Always Affordable!

A bumper crop from local farms means everyone can easily share in the harvest!

white cauliflowers

Ontario cauliflower is huge and abundant this year! There have been times when the crop has not been so rich, and the price of cauliflower reached as high as $8.99 a head! For $1.99 I had enough cauliflower to make three meals for myself, with enough to share with a friend. What to do with so much good-for-you cauliflower? Roast it: chop it into same-sized florets, toss with olive oil, salt and pepper, and roast on a parchment-lined baking sheet for 20-25 min at 375F, until soft and nicely browned. Once it cools, you can store it in an airtight container in the fridge to use in a variety of ways! You can add it to a rice bowl or salad, have it as a side with some roasted meats or a bowl of soup. You can also blanch larger florets of cauliflower and make a gratin. I’ve posted a Cauliflower Kale Gratin recipe in the Learn with lots of options for adjustment! However you cook it, may each mouthful of your cauliflower creation be a celebration of the harvest. Have fun, and let us know what you make!
